It's pretty common to use more than one reverb; the arrival of early reflections can be a good indicator of a room's size. I recently had a rare chance to record a large ensemble in a large venue direct to 2-track and I ended up using SPL's De-Verb (and a smidge of linear-phase EQ) to help reduce the tubbiness up in the balcony. If I have the luxury of multi-miking, I don't mic everything close. Sometimes no reverb at all is the best option.
