Everyone's got their favorites - those who inspired and modeled styles to emulate.
Keeping the list short seems challenging: here's mine: (each ones' full catalog could make for a stellar collection).
1. Lennon-McCartney/The Beatles
2. Joni Mitchell (she's not doing well these days :( )
3. Bob Dylan
4. Bee Gees
5. Paul Simon

That could be a little difficult because some singer + songwriters have written hits for others and were also singers and sometimes sang other's songs, like Albert Hammond and Harry Nilsson. The five I listed are ones who have written and sang many of their songs and had many songs that I've liked and listened to over the years.
