can i say "what we had's gone cold" instead of "what we had HAS (or IS) gone cold"? i'm not a native english speaking. and i couldn't find it written like this on google either...

It's interesting to me that you care about this/these details. I generally try to avoid contractions, because - depending on the singer's diction - it can get garbled, and hard to be heard.
Taking artistic license with language - IMHO - can always work, provided it's clear what the meaning is in the performance of it.
In the case of the question of your phrase - I agree, it's fine as-is. Already 'sounds' Country, even without the benefit of music.
