Please help me pick one out of the three.

Very hard to say - There's not really much bench testing for DAW use that I can see for those Xeon processors so I've no idea how good they are. Games are not a great indicator of DAW performance.

Most things I have read tended to say if you get into the dual Xeon price range ( are these machine dual or single processor ? As they are often sold as dual processor systems on those server motherboards ) you may as well look at one of the higher end Ryzen 3000 series ( 3900x - 3950x - 3970x ) so you'll be on a more modern platform, lower TDP , cheaper ram because it's not ECC etc.

Also some of it comes down to whether your DAW is good for multi threaded applications as they all handle them differently.

I did a load of research a couple of month's back and the best bang for my sub £1,000 budget was a Ryzen 3900x ( 12 core 24 thread ) which works great with the most up to date Cakewalk which has a setting for how aggressively it multi threads but it seems to balance the workload really well across all it's core and it runs cool enough even with the stock cooler. Plus there's lots of folks using them as DAW's so there's plenty of info out there on how they perform.

If they are only single CPU systems then I think you will find that the more modern desktop CPU's will out perform the older server CPU's as far as those two Xeon models you mention.

So it all comes down to how much they are I guess. Price Vs Performance.

They're all around $3000 which is far higher than that link. I quess those are not the whole package? My friend says he likes 2 because hes familiar w the i7. But he also says the other two have more ram which is important

Wow. $3k. Well that's a LOT of $$ to spend on outdated CPU's and dead end chipsets !

So the 14 core E5-2697 V3 isn't even anywhere near as fast as the 12 core Ryzen 3900x ...or are you looking at dual CPU's for that price ?

A $3k budget puts you firmly in the HEDT sector, I wouldn't bother with outdated server platforms unless you could pick up a bargain.

Depending on your use case you can put a WAY more powerful system together for your budget and be on the most up to date platform. What are you using it for ?
