I was hoping to 'arc' the Velocity along a single note, the way the 'horn crescendo' patches do.

Looks like velocity is more of an incremental, not a curable, thing.

I have to see what I can do live with my keyboard.

The way samples are made is for the Velocity CC to manipulate the 'timbre' of an instrument, usually in 3 sections from 0 to 128. This especially apparent with brass and winds. For percussion, the Velocity is only available on the initial hit note. Only on longer sustaining instruments can you 'arc' a Velocity curve along a single note.

To control the Velocity after the notes are written in, a slider knob I think is best to manipulate the CC's. My keyboard has assignable sliders, but it's feel is not as good as some of the hardware MIDI controllers made specifically for that task.
