I'm considering of re-writing the chorus to a song that I have signed to a music publisher in Australia back in 2011. Would the new version of the song be under contract until the reversion clause comes up or would I be able to pitch it to otter publishers? I

If your song is under Exclusive contract, then any changes or revisions or derivative works are still under that contract.

I agree with Russell with the same non-lawyer disclosure.

If you have confidence in the publisher, you could contact them and ask them if they'd like to also pitch the updated version. They might be willing to pitch it under the original contract with the same reversion date.
