Capturing realistic midi

I’m a relative newbie when it comes to midi. I’ve used it, but never really sunk my teeth into the various techniques available to make a recording sound like an authentic performance.
To that end, I’ve been pouring over books, the forums, videos etc to bring my knowledge base up when I’m away from the studio, and bring the notes back to play with new ideas later.
I found this cool 2-part video this afternoon that I thought might be worthwhile to other members looking to expand their skills:

For those with more knowledge, any alternate approaches that you find particularly useful? I’m all ears.
