1:36 in the video shows you what you can and cannot do. its only a stereo instance.
Other plugs like Kontakt give you stereo, 5.1, 16 x mono, 16 x stereo etc. This refers to the number of audio auxes in Logic that you can have audio piped out of that plugin.
So you are right, it allows you to sequence your hats, kick and snare on different midi channels, and then when you are ready to start "mixing" you solo the one midi region (using the "s" shortcut key to only solo that one mid region, not the whole instrument) and bounce in place, rendering that to audio.
Naturally you have to do this for every midi region. and each will end up on a separate audio track. Like Mazz says, then you have it all in audio and it doesn't matter if the plugin doesn't work any more, you can always go back and render a new mix.
I used to have all the multi-output instruments (like Kontakt, and Vienna Instruments) running to different audio outputs (auxes really in logic). While this was cool, because I could put different plugins on each track, it eventually just became more of a hassle than a help. And it increased the size of my template project - it was crazy.
Now all the orchestral stuff and drum stuff just in instantiated in stereo, and after getting my arrangement together, I go ahead and print all the midi stuff and have audio. Frees up a lot of CPU resources, and is more stable for the longterm to come back to.

The problem though is that their plug-in is a buggy piece of crap. I've yet to get the solo thing to work, although I could be missing something. Its really not that user friendly. I'm not the only one who thinks this either. A friend of mine who turned me on to this plug-in can't figure anything out on it at all. Also, if you do any panning or volume adjustments inside of the plug-in, I found that it often will revert back to whatever the default setting was. Right in the middle of your project. It would be much easier to load up multiple instances and not have to worry about all of the bugs in the plug-in. Printing the audio obviously works but for me it really doesn't match my work flow. I'm constantly swapping out drum sounds and layering things... sometimes I'll finish a track and then decide to completely change all of the drum sounds. Having to constantly bounce out audio files would be too much of a hassle and make it take too long. That would make a hip hop track take about as along as, say, a dramedy track. And dramedy seems to make more money over the long term as they are "timeless" and generally get longer placements IME. So in other words... it kind of defeats the purpose from a business standpoint to spend all of that time on a hip hop track. Unless its going to be a hit song of course

I'm not sure this will be any help or not. I'm not familiar with mac. The various operating systems of the mac seem to determine a lot of what you are able to do. What they call a vst or au host sounds like it might possibly be the solution you are looking for. Beat Thang seems to have both au and vst. I found a vsti host for mac.

It's restricting you loading up another instance of itself
Kontakt, Omnisphere, uTonic, etc... all these other Audio Units allow being put on other tracks in Logic, this thangy thing doesn't.
If I was going to go the route you suggested i'd go this way.
